
Itβs crazy how vividly a smell triggers a memory. The fresh baked scent of banana bread mixed with warm summer air always brings me back to our summer home in Fort Francis, Ontario. Specifically coming in from running up the seemingly hundreds of stone steps after spending the entire day down at the lake, hair scraggly wet and our bodies sun kissed and exhausted from swimming and jumping off the floating dock, eluding the black flies, mosquitos and giant lake leaches. π¬
Times are a little different now as I made these banana muffins while my newborn slept after a long summer day spent feeding her inside. My summer home memories have since been built onto as I made and re-made these muffins throughout my breastfeeding journey.
This banana muffin recipe doubles as a lactation-promoting bread with the use of galactogogues (substances that promote lactation): oats, flax seed, almond meal, and sesame seeds! (Just so you know, and in case reassurance is needed, galactogogues will not promote lactation in those who are not already lactating, so anybody can enjoy these!)
Breastmilk-making Muffin Recipe:
π 1 c almond meal/flour
π 1 c oat flour/ground oats
π 1 c ground flax seed
π 1/4 c pure maple syrup
π 1/4 c oat milk (or almond/coconut)
π 1 tsp baking powder
π 1 tsp baking soda
π 1/4 tsp Himalayan salt
π 1/2 c coconut oil
π 1/2 c unsweetened shredded coconut
π 2 eggs
π 2 very ripe bananas dug out of the back of the freezer
π 1/4 c chopped nuts
π Black sesame seeds and hemp hearts to top
Preheat oven to 350. Mix all ingredients by hand until combined, pour batter into a muffin pan and bake for ~40 mins or a loaf pan for bread for up to an hour. Enjoy!
